How to make high energy chocolate coconut balls (video)

Ideal for those with a slightly sweeter tooth, these chocolate coconut balls are the perfect solution to stay energised when out on the road

They may look like something that you may find in a Thornton’s selection box, however this chocolate coconut balls recipe is the perfect on bike snack.

Packing a few into your jersey pocket will ensure that you are sufficiently fuelled when out on the bike during a long ride as each ball contains 35 grams of carbohydrates.

Ingredients (makes eight)

  • 150g oats
  • 100g dates
  • 75g coconut oil
  • 60g raw honey
  • 30g almond butter
  • 25g desiccated coconut
  • 20g cocoa powder
  • 1 medium egg
  • Pinch of salt

1. Pulse then blend dates in a food processor or chop finely by hand until pulpy
2. Melt coconut oil, honey and almond butter together in a saucepan
3. Stir in cocoa powder and desiccated coconut
4. Lightly beat egg and add, along with saucepan contents and oats, to dates in food processor and mix well (or knead by hand in large mixing bowl)
5. Shape into 2 inch diameter balls, place on baking tray lined with greaseproof paper and bake at 180°C for 15-20 minutes
